A Mouth-Watering Holiday Recipe From Our Chef (and What to Do With Those Leftovers)

Even though Mother Nature has decided to unleash her wrath on Michigan already, you’ll find the team at Red Crown busy prepping for one of our favorite times of the year.

 

The holiday season is a time to give thanks, make memories with friends and family, and indulge in some amazing food, of course.

 

Food plays a central role in our holiday plans, as we’re sure it does the same for you.

 

That’s why we’re excited to share the following recipes from our Executive Chef, Michael Keys.

 

The first one is a sweet, delectable, crowd-pleasing dessert. Expect lots of recipe requests once they taste this one. The second is one of Chef’s favorite recipes for using up leftover turkey. It’s incredibly simple yet divinely delicious.

 

Bourbon Pecan Bread Pudding

What You Need

1 loaf of day-old bread cut into ½-inch cubes

7 eggs

6 cups heavy cream

2 tsp. cinnamon

2 tsp. nutmeg

.75 cups sugar

8 oz. white raisins

8 oz. pecans

Whiskey Sauce

1 cup heavy cream

1 oz. bourbon

1 oz. sugar

1 tsp. cinnamon

 

How to Make It 

1. Combine all ingredients in large bowl.

2. Transfer to buttered 9 x 13 pan, cover with film and foil and bake @ 350 degrees for 45 minutes to an hour (when egg is set or internal temp reaches 165 degrees).

3. Allow the bread to cool.

4. Combine all ingredients for the sauce in a small pot and bring to a boil.

5. Reduce heat to a simmer and cook for 30 minutes or until cream thickens.

6. Slice the bread, warm it in the microwave (if necessary) and top with the warm cream sauce. Garnish with fresh berries, ice cream or whip cream if your heart desires.

 

Leftover Turkey Sandwich with Curry Mayo

What You Need

A couple nice slices of turkey

½-inch wedge of stuffing

1 cup mayo

1 tsp. curry

1 T honey

Good bread or rolls

Salt and pepper to taste

 

How to Make It

1. Combine the mayo, curry, and honey and whisk together.

2. Build your sandwich with the leftover turkey (seasoned with salt and pepper), a liberal amount of the curry mayo, and a wedge of stuffing. Warm the turkey and stuffing for an even tastier twist.
